This wine is made up of 80% Cabernet Sauvignon and 20% Merlot. The Cabernet Sauvignon was picked in two passes through the vineyard.
The Angelicus Cabernet Merlot comes from a great vintage in the Pemberton Region. Due to the previous season of 2006 being the coolest vintage in fifty years in the South West of Western Australia, resulted in a low crop emanating in 2007.
The reduced crop together with a great growing season resulted in small berries which gave concentrated fruit flavours especially in the Cabernet Sauvignon block.
After harvest John and I hand plunged the must in 1000 litre bins 3 – 4 times a day during fermentation, which gives the deep rich colour and soft tannins found in the wine. We transferred the resulting wine into French oak barriques and the Merlot component had some American oak contact. The wine was finished and bottled by Di Miller and her team at Vintage Wineworx in the Porongorups.
This wine has aromas of black currants and plums with hints of cedar. Complex flavours of rich ripe red fruits and spicy fruitcake are followed by smooth yet firm tannins, with lingering intensity on the finish.
In its first showing at Qantas West Australian Show, it won a Bronze medal in a huge class. We believe even though it is a delicious drink now it will continue to improve with some bottle age. Great news this wine has just been awarded a high bronze at the 2009 Timber Towns Wine Show, where some of the toughest judges on the WA circuit presided.
