PANIS, 2005 SPARKLING PINOT CHARDONNAY

Panis is made from 50% Pinot Noir and 50% Chardonnay grapes harvested from the Angelicus vineyard.

The grapes were hand harvested in whole bunches and picked in two parcels then gently pressed and only the finest juice was used in the making of this wine.

The resulting wine was made in the methode traditionelle style and it has undergone secondary fermentation in the bottle before being riddled and disgorged.

All this care and attention has resulted in a fresh, crisp and elegant wine with great mousse, a creamy texture on the palate and excellent length.

In its first release at the Timber Towns Regional Wine Show it won “Best Sparkling” of the Show, and also received a lot of compliments for its very smart and standout packaging.

It has also caught the attention of Peter Forrestal with a  good review

Possible food matching tips are either to be served as an aperitif, or as a compliment to a rich dessert, or maybe we can just quote the famous Lady of Champagne,  …

“I drink Champagne when I’m happy and when I’m sad.
Sometimes I drink it when I'm alone, in company I consider it obligatory, I trifle with it when I’m not hungry and drink it when I am, otherwise I never touch it….unless I’m thirsty”
